The gastronomy in Puyuhuapi Lodge & Spa is defined as a fusion of flavors that mix typical Patagonian and Chilean preparations with Mediterranean cooking.
With the aim of optimizing supply logistics, the exquisite and delicate daily menus are made up of two alternatives of starter, main course and dessert, where products, flavors, textures and colors are combined, and all accompanied by a fine selection of Chilean wines.
The gastronomy in Puyuhuapi is renowned for its fine preparations with fresh products like king crab, salmon, southern hake, and king clip (congrio) extracted from the Patagonian fjords, by its lamb reared in the neighboring meadows.
In Puyuhuapi Lodge & Spa grow vegetables and herbs in own greenhouse, and hotel's chef uses local products like rosehip, redcurrant, nalca, rhubarb, calafate, and cherries.
Creating a fine dining restaurant in the wild heart of Patagonia was a challenge.
The absence of large supermarkets in the region led to Puyuhuapi Lodge's first consultant chef, Carlos Meyer Anwandter, to create a style very own unique food Puyuhuapi: the combination of seasonings and fresh and delicate products found in Patagonia, vegetables, Mediterranean herbs and spices from own organic farming to a modern fusion cuisine, while maintaining a Patagonian accent. Their creations became very influential in the main gastronomic circles Chile. In beginnings supplied from
Puerto Montt, Punta Arenas and even Santiago, before being more independent. Puyuhuapi Lodge's latest chef, the young and very talented Luis Catricheo, Mapuche (who had the opportunity to have a teacher to Guillermo Muñoz, one of the most prominent chefs in Chile and who was also in charge of hotel's kitchen for several seasons).
It is working almost exclusively with local ingredients while experimenting with their own ethnic traditions.

A trip of medium difficulty by a path that advances through the Patagonian woods, between coigües, tepas, and mañíos, perfect for bird watching, due to the wide variety of birds that inhabit this area: chucao, kingfishers, black woodpeckers, huet-huets, and many others.
With extraordinary botanical variation, this path is located on one of the highest points of the Carretera Austral, one hour by motor vehicle from the jetty of the Lodge.
The Aysén region is an exceptional place for bird watching. In the channels and fjords a rich population of marine life is found, including dolphins, seals, and marine birds.
Cross the fjord by motorboat to the quay on the Carretera Austral, to then continue for 15 minutes by car to the Ventisquero Colgante area of Queulat National Park. The River Ventisquero runs throughout the glacial moraine valley molded by the Hanging Glacier.
A walk starts directly from the Lodge. You can see spectacular views over Dorita Bay and the Puyuhuapi Channel. The route advances through the shelter of the friendly canelo woods. The return journey can be done in a kayak, in approximately 30 minutes, through the calm Dorita Bay.
In the northern area of Queulat National Park is this 5.6km path that climbs steeply through the natural woodland, and in its last stretch reaches the Los Pumas Lagoon.
Visit to islands and bays of the Puyuhuapi Channel and the Jacaff Channel in dinghies is just exceptional, with the possibility of spotting bird colonies and, with a bit of luck, marine mammals like seals and bottlenose dolphins. Includes boatman.
One of the most beautiful places in Chile and even on the planet, enchanting with unique natural sights, where you can appreciate the effects of tectonic movements, volcanism and glaciations which gave rise to islands, channels, fjords, ice fields, snowdrifts, and mountain ranges.
Puerto Puyuhuapi is found 30 minutes by boat from the Lodge. It has approximately 500 inhabitants and continues developing, with inhabitants who work in farming, tourism, and fishing in the area.
Is located in the Aysén region, with the Hanging Glacier (Ventisquero Colgante) only 15 minutes from the jetty of Puyuhuapi Lodge & Spa. Its highest summit is the Alto Nevado, at 2255 meters above sea level, from which comes the Hanging Glacier with its impressive cascade.
You sail by sea kayak for 1–2 hours through the calm waters of the Puyuhuapi fjord, traveling past islands, islets, and fjords, and observing a wide variety of marine birds such as herons, black-necked swans, wandering albatross, coots, steamer ducks, penguins, and many more.
A walk for everyone. After walking approximately 600m along the path that accesses the edge of the Témpanos Lagoon, magnificent panoramas will appear from the Hanging Glacier together with its impressive ice slides.
