Lime Wood was five exciting years in the making and the results are a rich collaboration of creative talent at its best. The architectural parts were designed by Charles Morris and Ben Pentreath, interiors have been added by David Collins and more recently Martin Brudnizki and Rob Angell.
Chefs Angela Hartnett and Luke Holder do the cooking, pulling together both of their much admired signature styles, to create Hartnett Holder & Co, relaxed Italian restaurant. At the Herb House Spa you can do yoga on the roof in a herb garden, revive together in double treatment rooms and take in the forest views from the massive sauna.
The ultimate countryside getaway; perfect for weekend breaks, a dash from the city, or an escape from home.
MAIN HOUSE
In Main House there is a variety of rooms from cosy Eaves up to Forest Suites. Three luxury duplex Forest Suites are truly special with galleried sleeping zones and an area to chill out below.
You will experience the perfect balance of space in each of rooms and suites. There are also Forest Suites on just 1 level.
All of the rooms in the Main House have beautiful bathrooms with lots of white marble, large plate-sized shower heads, big fluffy white towels, Bamford toiletries, that kind of thing.
In a nutshell, hotel's team thought chic, comfortable and luxurious Rooms & Forest Suites would be best, so that's what they did.
PAVILLIONS
You'll find the Pavilions in the grounds, overlooking the Main House and the garden. The luxury Pavilions almost melt into the New Forest surroundings, the ultimate definition of hideaway chic.
Pavilion 1 (Forest Lodge) is a standalone Lodge which you enter through a Bath Stone columned archway into a stone paved lounge area. Here, French doors lead onto a patio with views of the New Forest, a bit like your own country cottage. These luxury Pavilions are cosy but spacious, chic but romantic and it may be hard to leave.
Pavilion 2: If you go through the Bath Stone arched column on the left you'll find yourself in a hallway with a curved staircase leading to the bedroom on the first floor. There's a four poster bed, high vaulted ceilings, oak wooden floor, roll top bath, open fire and large bay window overlooking views of the forest. Pavilion 2 & 3 are adjoining.
Pavilion 3 is on the ground floor, you enter through a Bath Stone arched column on the right hand side into a bedroom and seating area. There's a writing table (which could also be used for dining), heated stone floor, bathroom with walk-in shower and a bay window which leads out onto the forest via a terrace. Pavilion 2 & 3 are adjoining.
THE CRECSENT
Crescent is situated next to the Coach House and with direct access into the Forest and backing straight onto the trees; the Crescent Rooms and Suites are particularly peaceful and secluded. The Crescent Rooms have a kind of Franco-Scottish flavour with an added touch of New England and it's worked really well; crisp, light-filled and chic. The Crescent Rooms include 1 Spacious room, 2 Forest suites, 1 Forest Hideaway suite, The Crescent suite. Crescent 3 (Forest Lodge): Enter into a stone paved lounge area with French doors leading onto a terrace with views of the forest, a bit like your own country cottage. If you don't feel like joining us in the hotel's restaurants, there's a dining table so you can get that chilled night in feeling and then cosy up by the wood burner.
Just as you'd hope for in the best kind of hideaway, the staircase leads to the bedroom with a vaulted ceiling, wood burner, balcony and roll top bath. Downstairs is a single bedroom with a walk in shower bathroom. The Crescent Suite is cosy but spacious, chic yet romantic and it may be hard to leave.
THE COACH HOUSE
Just down the steps from the Main House is The Coach House, another unique building at country house hotel designed by Charles Morris. The decoration gives a nod to a traditional Arts and Crafts style but there's also a hint of Italian architectural details in the added Cortile and Loggias. It's immaculate but fun and quirky too.
The Coach House is made up of interconnecting rooms and suites, making it an ideal option for small groups of friends and family who may like to book the building as a whole.
The Forest Hideaway Suites are laid out over two floors with sitting room, dining room and some even have a cosy wood burner. On the ground floor there is access to a private terrace or balcony and upstairs there's a bedroom, a bathroom and fantastic views onto the forest. The Coach House has 1 Cosy room, 1 Generous room, 3 Forest Hideaway suites.
Cosy rooms are very light and airy with views over the grounds and surrounding forest. The Cosy rooms in the Main House have large fitted baths in front of the window and separate walk in showers.
The Cosy room in the Coach House has a fireplace in the room, a small outside terrace looking out onto the forest and the bathroom has a walk in shower.
Eaves rooms are tucked away in the rafters of the Main House, they’re comfortable bedrooms with king sized beds, overlooking both the lawns and the fields as well as the gardens and canals with the forest beyond.
The bathrooms have fitted bath tubs with overhead showers and skylights overhead, the floors are wooden oak and some even have 2 sinks.
FOREST COTTAGE 1 & 2
Rustic yet sophisticated with stripped oak floors and open fires; warm, unbelievably comfortable and a total escape!
The Forest Cottages are located in the grounds, surrounded by forest and meadows. The two storey family suites blend into their surroundings and are perfectly self-contained with a kitchenette, dining and living area with snug log fires.
Both cottages have an upstairs master bedroom with king sized bed, en suite bathroom with free standing bath and double monsoon shower.
Cottage 1 has a downstairs twin bedroom and Cottage 2 has an upstairs bunk bedroom, both have an additional shower bathroom.
These cottages can be interconnecting making them perfect for larger families or groups.
FOREST CABIN
The Forest Cabin is beside the Forest Cottages and has bags of rustic charm. It’s a cosy ground floor family suite, the master bedroom features a king size bed, en-suite bathroom with free standing bath, monsoon shower and 2 sinks and there are bunk beds with en-suite shower for the kids.
There’s a multipurpose kitchenette, dining and living area with a log fire to cosy up to making it warm, comfortable and stylish.
Forest Hideaway Suites are all located in forest rooms in the grounds and are designed over two floors, with a downstairs lounge, small dining area and cosy fireplace. The bathrooms either have fitted baths with waterfall overhead showers, or a roll top standalone bath and walk in shower.
They all have either small private terraces or balconies with stunning views out onto the Forest or across the Lime Wood grounds.
These are the most extensive and indulgent suites, Crescent 3 and Pavilion 1. Both are on designed over two floors; with a lounge, fireplace, dining area and outside forest terrace.
Crescent 3’s master bedroom is upstairs with a sumptuous king sized bed, a private balcony and large bathroom with a free standing roll top bath and walk in waterfall shower.
Downstairs is a lounge area that has space to relax and eat with double doors that open up into the forest, and another single bedroom with en-suite bathroom.
Pavilion 1 is a standalone lodge with a bunk bedroom downstairs and a large master bedroom upstairs with a roaring open fire, romantic four poster bed and in the bay window, facing the forest, a free standing bath.
There is also an en-suite bathroom with a walk in shower. Downstairs the large lounge has seating and a dining area as well as double doors that open up onto your own private forest terrace.
These large suites have a mixture of four poster king sized beds or twinned beds.
All have views overlooking the grounds, fields and forest.
Some of these beautifully decorated rooms are designed over two floors, but all have lounges, some with dining tables, and large en-suite bathrooms with a bath and separate walk in shower.
Each of Generous rooms is different; they can be found in the Main House, the Coach House and in Pavilion building.
With baths, inviting king sized beds and stunning views across the forest and grounds.
Main House Generous rooms are classic and luxurious in their design, with roll top baths that look out into the forest. The Generous room in the Coach House has oak wood flooring, panelled walls, an open fire and a large balcony looking out onto the forest.
The Lake Cabin is definitely for romantics - with a living sedum roof , clad in reclaimed timber inside and out, the cabin is true to its name and is cantilevered out over the lake giving a sense of floating on water which surrounds its balcony on 3 sides.
Large triple aspect picture windows ensure you feel immersed in the environment and a full width balcony over the water with your very own outside bath tub completes this secluded experience.
The Lake Cabin is simple but sophisticated - the interior has stripped wood floors and walls, a king-sized bed and en-suite bathroom with full bath, walk in shower, and separate W.C.
There is also a mini kitchen /bar area.
Based in the Main House and Crescent building these rooms are very comfortable, light and airy, overlooking the lawns, fields and the forest beyond.
Most of the rooms have four poster beds and the Spacious Room in the Crescent even has an open fireplace!
They all have very large and bright bathrooms with walk in showers and large baths.
Full Afternoon Tea includes a yummy selection of finger sandwiches, homemade scones, clotted cream & strawberry jam and sticky eclairs, with your choice of tea.
You can also choose a big slice of one of homemade cakes, and if the team still hasn’t satisfied your sweet tooth tuck into some of daily pick and mix treats.
Perfect to pair up with a glass of fizz or a cup of Lime Wood blend.
Gluten free options are available as well! Or why not try something a little less traditional. A special Gin from head bartender’s selection paired to your tastes and to accompany sandwiches and sweet treats.

LUKE HOLDER
He's worked in some of London's busiest and most exclusive restaurants including Orrery, The Sloane Club, and the Oxo Tower on the South Bank. Luke then spent a year cooking in the Italian kitchen of Enoteca Pinchiorri, 3 Michelin stars, in the heart of Tuscany, Florence - this experience ultimately changed his philosophy on food forever and firmly placed his focus on cooking locally and seasonally, at the highest level.
ANGELA HARTNETT
One of the most high-profile female chefs in the restaurant world. Angela worked under Gordon Ramsay at Aubergine, and then under Marcus Wareing where she soon became Head Chef at Pétrus. In 2004 she gained her first Michelin star. In 2008 she launched Murano in Mayfair.

You may want to choose from one of set classes, trying your hand at baking, perfecting pasta or cooking on fire (literally!) and take over the whole kitchen, or you may have something a little different up your sleeve.
Hartnett Holder & Co is a relaxed, stylish and comfortable restaurant - full of character, yet unpretentious. Angela Hartnett and Lime Wood’s Luke Holder, with their team, create locally sourced Italian dishes with a respectful nod to the seasons.
Hartnett and Holder’s food comes with the much loved Italian approach to eating - where sharing and provenance is everything.

Next to Hartnett Holder & Co there's the working kitchen which was designed to fit in with open house approach.
The team would love it if you felt like sitting at the kitchen table with a cup of coffee and having a chat with the chefs about what they're up to. And they'd love it too.
So was put in a large antique and well worn wooden table with benches on either side that allows people to enjoy themselves and gets the conversation flowing - it seats approximately 10 so that you can do just that.
The team creates a lot of interesting things and you'd be amazed what you might learn and see. Sometimes it's fun to just read the papers and soak up the action going on around. Alternatively can be arranged a private dinner for you at the kitchen table for up to 10 guests.
The menu will be created for you on the day by the Hartnett Holder & Co team, using the best seasonal ingredients, and highlights from the menu.
Raw and Cured is food bar in the Herb House Spa which offers delicious, natural and healthy food, including freshly made salads, cured fish and meat from Lime Wood’s own Smoke House; as well as fresh juices and smoothies, but not forgetting the glass of wine and fizz to remind you that it’s ok to indulge!
Food sourcing policy is simple: Quality, Seasonal and Sustainable. The dishes contain an array of natural mixed nutrients, are low in cholesterol and good fats are only used!
Creative team of "raw chefs" prepare everything from scratch, so not only do these dishes taste fabulous but they will suffice any craving you have and boost your body with an abundance of feel-good-nutrients.

As you approach Lime Wood you may notice a small brick house tucked under the brow of a hill. This is The Smoke House.
The head chef Luke holder and his team of chefs are all regular visitors to the Smoke House.
After having left their kilo of salmon to cure for 10 days, Luke and his team carry it down to start the smoking process. Placed in the large BBQ like oven, the hot dry air begins to smoke it; the flavours begin to mature, resulting in exquisite tasting Salmon.

Series of food and music festivals hosted at The Pigs & Lime Wood.
This year Smoked & Uncut returns to Lime Wood with live music, rock 'n' roll, the understated luxury of a glamping village and the rustic styles and flavours of the street food stalls.
There will even be a VIP feast cooked up by Chef Mark Hix, Angela Hartnett and friends on both the Saturday and Sunday events.

ROOF GARDEN
The Herb House roof or ‘Herbery’ is designed with reflection in mind. Its tranquillity allows it to be the perfect backdrop for mediation, a spot of sunbathing, or an early evening drink with friends.
It was especially designed to reflect the location of the spa and natural approach to well-being. It was deliberately planted to contrast the small, delicate herbs with the majestic trees in the forest beyond. The proximity to the forest and rooftop position influenced the planting to as unstructured as practically possible, to ensure there was a natural visual flow from the herbery to the forest.
The planting gives the space on overall sense of serenity as well as to provide interest and excitement as you touch, smell and even taste some of the herbs and plants. Many of the herbs grown can be found in smoothies and juices at Raw & Cured, as well as on Hartnett Holder & Co’s menu!
Own dedicated Fitness Team are on hand at all times. A selection of classes is holded daily in the Workout studio & Lap Pool. In the summer time, some fitness classes are held on the Herb House Roof Garden & in the Forest.
