Opening early 2017, The Game Bird will celebrate the very best of British cooking, but with innovative, modern touches.
Dishes by Executive Chef James Durrant will showcase the very best produce the British Isles has to offer; Clarence Court eggs, Orkney sea scallops, Jersey, Colchester, Dungarvan, Lindisfarne and West Mersea oysters and Lincolnshire smoked eel.
With a nod to James’s Cheshire upbringing, the hotel's team will also have a changing selection of pies, puddings & stews such as Salt Marsh mutton lobscouse and Steak and ale steamed suet pudding, while a traditional Sunday roast will be served from a trolley with “gravy and all the trimmings”.
The hotel's team will begin taking reservations for The Game Bird from early 2017.
