HISTORY
Adare Manor borrows its name from the nearby village of Adare, beloved for its delightful thatched roof cottages, lively pubs, and antique shops. Sitting on the banks of the River Maigue, Adare overlooks the fording point from which the village derives its name: Ath-Dara meaning ‘The Ford of the Oak’.
The plans for the Manor House as it exists today were begun in 1832. Until then, the 2nd Earl of Dunraven and his wife, Lady Caroline Wyndham, lived in a Georgian house known simply as “Adare House” and built in the 1720s by Valentine Quin, grandfather of the 1st Earl of Dunraven.
Adare Manor is a tribute to the Dunravens’ sense of exuberance, wit, and style. An example of a rare ‘Calendar House’, Adare Manor is adorned with 365 leaded windows, 52 ornate chimneys, 7 stone pillars and 4 towers to mark the annual tally of days, weeks, and seasons in a year.
The Manor House is reminiscent of a chateau, sharing many features of the 19th century Gothic Revival in Britain and Ireland, and drawing inspiration from a romantic view of the chivalric past.
The building displays a wealth of gargoyles, heraldry and decorative stone and wood carvings. Many of these carvings show creatures and monsters from the Bestiary, a medieval book of mythical beasts.
The interior spaces are designed on a grand scale. One of the most renowned interior spaces is The Gallery: a 132 foot long, 26 ½ foot high expanse inspired by the Hall of Mirrors in Versailles and lined on either side with 17th Century Flemish choir stalls.
As the seat of the Earls of Dunraven until the early 1980s, Adare Manor was a beloved family home; a place to enjoy the simple pleasures of everyday life and to celebrate holidays, birthdays and weddings.
It has also been the setting for hunt balls, game fairs, concerts and even a Hollywood movie, The Last Remake of Beau Geste, starring Spike Milligan and Marty Feldman.
Visitors over the years have included prominent politicians, musicians and members of the Royal Family, notably in 1897 from the Duke of York, who became George V on the death of his father in 1910, and his wife, the Duchess of York.

THE CUISINE
Award-winning Head Chef Michael Tweedie has devised spectacular seasonal menu for The Oak Room, drawn from the rich gifts of the Irish landscape. Every care has been taken to source the highest-quality ingredients from Irish artisan producers, including many local suppliers.
Exquisite seafood, sustainably farmed meats and game, the bright flavours of freshly-picked vegetables and some special touches foraged from the grounds of Adare Manor itself will take guests on a journey through the distinctive terroirs of Ireland.
The result is a collection of simple but innovative and refined dishes which allow the true personality of these exceptional foods to shine through. An extensive and adventurous wine-list, curated by expert Head Sommelier Jurica Gojevic, offers thoughtful pairings to perfectly complement each dish.
THE DESIGN
The Oak Room was the original family dining room, host to countless intimate family meals and glittering dinner parties throughout its long history.
The distinguished oak-panelled room has been lovingly restored and extended to encompass a glorious stone colonnade.
The colonnade, once an open terrace leading to the gardens, is now fully enclosed in glass, allowing beautiful views of the formal parterre.
When the sun has set, it is a magical setting for dinner by the soft glow of candlelight. High in the arches of the colonnade are a series of heraldic roof bosses, carved from stone to commemorate the marriages of four generations.
The main dining room overlooks the beautiful Maigue river which meanders through the timeless water meadows of Adare.
The warm glow of the oak panelling is complimented by wall coverings of deep Irish green pure wool fabric, with walnut furniture upholstered in gold woven fabric.
Silk damask curtains and bespoke wool and silk damask rugs add a layer of luxurious softness to the surroundings. The centrepiece of the room is the magnificent carved wooden over-mantel which graces the large fireplace. It was designed by Augustus Pugin, the celebrated architect genius whose mastery of Gothic style can be felt throughout the manor house.
Like many of the notable carvings throughout Adare Manor, it is inspired by the natural world and by the heraldry of Dunraven ancestors. The blank shields and scroll intertwined with rose branches were likely intended to be filled with coats of arms and a family tree, though it was never fully completed.
The existing carvings, however, are more than enough to enchant the eye: birds with outstretched wings, finely realised leaves and flowers, and an imposing barred helmet carrying an Earl’s coronet.
The Quin family motto, carved into a banner, reads “Quae sursum volo videre” or “I wish to see what is beyond.”
The Carriage House Bar is the bustling social heart of the hotel from afternoon to night.
The bar is a wonderful gathering place where guests can enjoy light bites, bar snacks and a remarkable collection of fine wines, craft beers, and sophisticated cocktails. The atmosphere is smart, lively, and relaxed.
The design of The Carriage House Bar is a perfect union of traditional Irish culture and elevated contemporary styling. Rich leather and dark-stained oak furnishings with touches of brass, bronze and pewter offer a sense of timeless luxury.
Low lighting in warm tones creates an inviting and intimate environment at any time of day. Bespoke chairs, banquettes and barstools are arranged through the space to encourage mingling, with welcoming nooks for conversation.
Guests can also enjoy a quiet drink by the fireside, framed by a magnificent firelance of Breccia Capraia marble.
The panels in the left wall can be opened up to create sight-lines through to the lounge, allowing a sense of spaciousness and comfort at even the busiest times.
The Carriage House Restaurant experience centres around exceptional food and impeccable service in a stylishly relaxed atmosphere.
The Adare Manor Director of Culinary, Loughlin Druhan, has created an exciting menu featuring artisan ingredients sourced from across Ireland. Locally farmed produce, fresh seafood, and Irish dry-aged beef take centre stage in exquisitely prepared dishes designed to delight.
The dinner menu shines a spotlight on hearty favourites elegantly prepared: Connemara lamb, Atlantic lobster, and some of the best prime cuts of beef in the world are grilled to order on a specifically designed char grill, using real charcoal from sustainable sources.
The restaurant is a smart and polished room, with nods to art deco chic. Metal inlays, dark oak stains and metal inlays distinguish the furnishings and gold-leaf mirror wall panels enhance the air of discreet opulence. Breccia Violetta marble is used throughout the space.
The architectural highlight of the restaurant is its beautiful central skylight. Delicate seeded glass panels allow natural light to flood the room during the day, and at night the skylight is artfully lit, with small chandeliers suspended from a surrounding band.
Ambient lighting is also provided by table-side lamps with bespoke fabric lampshades, which create a warm glow and intimate mood throughout the room and unique wall lamps with a leaf motif.
Restaurant seating features deep leather banquettes with metal and seeded glass screens to allow for private conversation over the meal.
The back wall of the restaurant is composed of floor-to-ceiling sliding doors, which feature the same seeded glass found in the skylight and screens. These doors can be opened up to unite the restaurant with the private dining room.
The glazed terrace makes it possible for guests to enjoy the benefits of the stunning vistas year-round. A relaxed breakfast menu is served every day, while lunch and light dining options are available each afternoon.

One whole wall of the terrace is glazed, offering sweeping views of the putting green and grounds. The decor highlights the transition between indoor and outdoor space.

Lanterns in a hammered metal and textured glass finish further accentuate the indoor/outdoor mood, while limestone-clad walls and a timber ceiling give the space a subtly rustic ambience.

THE COCKTAILS
Curated by the expert mixologist, The Drawing Room’s list of traditional and innovative signature cocktails is a tribute to Adare Manor’s distinguished history and setting.
Enjoyed as an aperitif before dining in The Oak Room, or savoured as a nightcap before retiring, a cocktail in The Drawing Room evokes a mood of inspired relaxation. Each drink features specialty liquors and sophisticated flavours, giving even the most classic of cocktails a fresh and subtle twist.
Lady Caroline described The Drawing Room as “noble” and that aristocratic adjective still applies today. The magnificent restoration of the ceiling, with its gold leaf and original plaster details of clustered shamrocks, casts a glow of opulence over the space.
The room’s furnishings are an echo of this luminous presence: woven pale vanilla fabric on the walls, armchairs in soft warm shades of gold, and bespoke draperies adapted from an archived 18th century French brocatelle, re-woven for Adare Manor on traditional looms.
The Drawing Room is graced by the work of two historically important architects. The stamp of Philip Charles Hardwick in evident in the grand bay windows, which bathe the room in natural light.
Framed by those same windows are gorgeous views of the formal Parterre Gardens, painstakingly designed by Hardwick and the 3rd Earl of Dunraven over the course of several years.
Hardwick also contributed one of the imposing fireplaces in the room, adorned with carved crocodiles, a pegasus, and a wolf’s head, among other emblems of the Quin family.
The other grand fireplace, carved in Melograno marble, is the work of architectural genius Augustus Pugin, and exhibits his romantic interpretations of heraldic design.
The piece features many masterful carvings, particularly of gently twisting oak leaves and acorns: a reference to Adare whose Irish name Áth Dara means “the ford of the oak tree.”
The private dining chamber in The Carriage House Restaurant can accommodate parties of 10 to 28 guests. This is an elegant, intimate room for special dinners and events and can also be used as a distinguished meeting room.
Hints of metalwork and Breccia Violetta marble, combined with crisp off-white linen and leather seating echo the decor of the main restaurant.
