Imagination is all in Virginie Basselot’s kitchen. After earning her first Michelin star in 2014, she received the prestigious MOF (Meilleur Ouvrier de France) title a year after, confirming her ranking.
Inquisitive and determined, she trained under some of the world’s most renowned chefs including Dominique Bouchet at the Crillon, Guy Martin at the Grand Véfour and Eric Frechon at the Bristol.
During her nine years in this last position, she quickly scaled the ranks to become the First Sous-Chef, helping the restaurant earn its third Michelin star.
Virginie’s cuisine is refreshingly innovative, always in step with the seasons and inspired by ingredients grown in the Saint James Paris vegetable garden.

Judicaël cut his teeth at the Hôtel Collectionneur and at L’Opéra Restaurant. But happily, he fell hard and fast for the cosy elegance of the bar-library at Saint James Paris.
Once the Foundation’s study, it still contains 12,000 volumes and an atmosphere of intellect and peace.
He also enjoys experimenting with new mixes, working with a palette of spirits, fruits and syrups to develop new flavours.
And he loves to surprise. Unexpected tastes using herbs, aromatic plants and vegetables are a passion. He refers to himself as a “herbalist”.
