Benjamin joined Lucknam Park as Sous Chef in the Michelin starred ‘The Park’ restaurant kitchen in March 2010 from ‘Le Gallois’ a renowned 3 AA Rosette restaurant in Cardiff.
Passionate about food he has worked tirelessly to develop his skills and flair in some of the best restaurants in Wales.
As a determined and dedicated chef it didn’t take long before Ben was promoted to the position of Brasserie Head Chef in 2013.
He is a passionate advocate of using the very best locally sourced ingredients combined with a natural understanding of flavour combinations Ben delivers some highly accomplished cooking.
Having shown great promise since arriving at Lucknam he is delighted at this opportunity to take command of the Cookery School and to further develop the skills of both himself and the guests.
Elly began her catering career at the tender age of 13 where she started as pot washer at a local pub.
She went to Plymouth City College to study for an NVQ Level 2 in professional catering and also took an apprenticeship at St Mellion Golf Club in Cornwall.
Elly then worked in restaurants in Wales and the Lake District before returning to the South West to work at Tanners Restaurant in Plymouth and then at the Elephant Restaurant in Torquay.
From Devon, Elly moved to the Manor House Hotel at Castle Combe in Wiltshire, where she worked as Chef de Partie.
Here she entered and won the Young Professional class of the
South West Chef of the Year competition in 2012 and again in 2014 before going on to win the title of South West Chef of the Year that same year.
In June 2015, Elly took a position as Chef de Partie at Lucknam Park, Bath and graduated to Junior Sous Chef three months later.
In the same year she reached the final of the Craft Guild of Chefs Young National Chef of the Year competition.
The following June she was one of four winners of a Royal Academy of Culinary Arts Awards of Excellence (kitchen category).
Hywel Jones is Executive Chef for The Park Michelin-starred restaurant and The Brasserie.
Since his appointment in 2004, Hywel has successfully raised the standards of the cuisine to a level that has resulted in numerous accolades including a Michelin Star.
Hywel started his career with David Nichols at The Royal Garden and then moved on to work as Chef de Partie in two Michelin 3-star establishments; Chez Nico at 90 and Marco Pierre White.
Prior to his move to Lucknam Park Hotel and Spa, he was executive Chef at Pharmacy Restaurant in Notting Hill.
Awarded Hotel Chef of the Year at the 2007 Hotel Catey Awards, Hywel has created superb menus in both the Michelin starred Park Restaurant and more recently in the stylish and contemporary Brasserie.
Where possible, Hywel uses locally sourced ingredients including micro salads, vegetables and herbs from Lucknam Park’s own kitchen garden.
He has built a personal relationship with his local suppliers ensuring high quality ingredients that are always reflective of the season.
Hywel Jones featured in the Great British Menu on BBC 2 in May 2011 representing Wales.
Hywel saw off the competition with his four great dishes and was crowned the Welsh Champion, he then went on to represent Wales in the series final.
Sadly Hywel’s menu was not selected, however Chef remains a Champion to us all at Lucknam, the hotel's team are incredibly proud of his achievements to date and his continuing success.
Hidden in a far corner of the estate, the Kitchen Garden provides seasonal produce to be used in the kitchens.
From nasturtiums and salad leaves to baby vegetables, micro herbs and white raspberries.
Hywel regularly visits the kitchen garden with the estates manager to check what is becoming available so that the menus can be updated accordingly.
Lucknam renovated the old Vinery in 2012, a historic greenhouse, where the hotel's team have grown an eclectic range of micro salads and herbs.
The newly built 8 large raised beds, filled with over 120 tons of
top soil, now has over 30 varieties of produce, ranging from alpine strawberries, rhubarb through to runner and broad beans; from edible flowers to root and brassica crops.
Seasonal produce from the kitchen garden is shown regularly to Hywel so the kitchen is updated as to what is available.
This then enables the Kitchen to have produce when it is optimum size, freshness is never an issue as from garden to kitchen is just minutes away.
Garden produce is increasingly picked last minute and used for specific menus; the produce is also used in the Cookery School.
