The Medicinal Herb Garden at Borgo San Felice has a long-established history: the farm labourers of this small village used to grow herbs here in past centuries for medicinal purposes. Today, following the restoration of the original area, every day Executive Chef Fabrizio Borraccino personally cares for his “aromatic herbs”, from the most widely used varieties such as the many types of Basil, commonplace Marjoram, Thyme, Sage, Oregano, Chives, highly scentedDill, Pimpernel, Costmary, Rue, Lovage, Sorrel, Rosemary, Sage to pineapple and Japanese Shiso.
All these gifts of nature find their way into the culinary expressions of the two restaurants at Borgo San Felice, the Poggio Rosso restaurant 1 Michelin Star and the Osteria del Grigio.
Orto Felice, the natural garden of the village, occupies an important place in the running of this Relais & Châteaux, involving the hotel guests and staff.
Besides, this is where most of the fruit and vegetables come from which are destined for use by Executive Chef Fabrizio Borraccino in the kitchens of San Felice. The Orto Felice also performs a “social” function since it engages the elderly residents of the area and some disabled young people: in fact it is part of a wider project going under the name of "L'orto e l'aia nel Borgo", assisted by Sonia Belluardo a field in which four “special young people“ grow local seasonal vegetables.
While a part of the products are used as ingredients in the creative cuisine of Chef Borraccino, the surplus crops are sold on the local agricultural markets to finance activities associated with the vegetable garden.
An informal and cosy atmosphere, exposedceiling beams and wrought iron lamps, spacious terraces shielded from the sun by trailing grapevines receive guests in a romantic Tuscan tavern in the Chianti countryside. Having trained alongside outstanding multi-starred Chefs such as Antonio Guida and Gordon Ramsey, with interesting experiences both in Italy and abroad, he is now happily settled in Tuscany.
